oatmeal banana muffins

Makes 6 large muffins or 12 regular muffins.

INGREDIENTS:

2 cups oat flour

1/2 cup almond flour

2 tbs coconut flour

2 tsp baking powder

1/2 cup buttermilk (milk with 1 tsp of apple cider vinegar let sit for 5 min)

1/4 cup avocado oil

3/4 cup maple syrup

3 eggs

1 banana

INSTRUCTIONS:

1. grease or line the muffin tin and preheat the oven to 350F

2. add vinegar milk and let sit for 5 min

3. in a medium bowl mix dry ingredients

4. in a large bowl mash banana and mix in the rest of the the wet ingredients

5. add the dry ingredients to the wet and fold to incorporate

6. divide batter into muffin tin and bake for 25-35 min
